This dish is a family favorite. With only 4 ingredients, it is easy on the budget and preparation time.
Ingredients for family of 5:
Rice – 3 cups when cooked Broccoli (frozen) – 2 lbs.
Cauliflower (frozen) – 2 lbs. Polish Kielbasa Sausage – 3-6 lbs.
Optional: Soy Sauce, Sea Salt, Pepper, and Coconut Oil
Cook rice according to the package or rice cooker instructions. Putting 1-2 tablespoons of coconut oil in bottom of pot or rice cooker pan will help prevent the rice from sticking.
Place broccoli and cauliflower in separate pots. Add approximately 1 cup of water to each pan; just enough to cover about ¼ of the mixture. Cover and bring to a boil. Then turn the temperature down to low. Allow to simmer with lid on until sausage and rice are finished cooking.
Cut up sausage and fry at medium heat with approximately ¼ cup of water in bottom of frying pan or wok. Stir occasionally; adding water as needed to keep meat from burning. Most of our family likes the meat darkened around the edges. Drain fat from meat once cooked.
Serve hot. Some like each food to have its own place on their plate. Others like to layer it with the rice on bottom, then the vegetables and ending with the sausage on top which allows the meat flavor to seep down into the vegetables and rice. Season with soy sauce or salt and pepper to taste.
This dish is just as delicious without the rice if you’re cutting down on your carbs. We also frequently eat this with just broccoli as the vegetable portion.
